Prior to taking up his teaching post at the world renowned Ecole hoteliére de Lausanne, Ian held senior management posts in both the five star hotel market and the contract food service industry. He started his career with the then Savoy hotel company in London, where he stayed for 7 years prior to moving onto the London Ritz. During this time Ian specialized in F&B management, focusing mainly on banqueting operations. His move into contract catering came about when he started working for the UN at the International Maritime Organization, before moving on to direct catering operations at the world famous Wembley stadium.
Ian then progressed into Multi Unit management, firstly with Gardner Merchant and then the Compass group where he was simultaneously responsible for a large array of different contracts across the south and west of England.
He is a winner of the prestigious Olive Barnett award and has a history of presenting at conferences across Europe, the Middle East and the USA, mainly on the subject of Innovation in the hospitality industry, a subject on which he has published numerous articles. Ian is now an academic module leader teaching pre and post grad students in F&B strategy and innovation.
Ian sits on the international advisory board of Catersource USA and has been an advisor to the World Food Safety Organization, he is also fellow of the Institute of Hospitality.
